I make this dish at least once a month. More so when it is a cold raining day. It is a family favorite. This is part 2 of my Chowder Recipes. This could also be made in the crock pot. Just add in all the vegetable & broth & set on high. Then about 2 hrs into cooking make the chicken, bacon & onion mix on the stove. Then add to the crock pot and let go for another 3-4 hrs.

Ingredients

  • 1 pound chicken, chopped
  • 4-6 medium potatoes, chopped
  • 1 small onions, small white & chopped
  • 2 small carrots, chopped
  • 3 small celery, chopped
  • 1 bag corn kernels, frozen
  • 1 pound bacon, chopped & cooked
  • 2 boxes chicken broth
  • 1 can cream of chicken soup
  • 1 - bay leaf
  • 1/2 tablespoon salt and pepper

How To Make chicken chowder

  • Step 1
    Get out a large pot & medium frying pan. Clean & chop all the vegetables. Place onions on the side. Chop the chicken & bacon.
  • Step 2
    Place frying pan over medium heat. Add in the chicken, bacon and onions & bay leaf. Lightly salt & pepper. Cook until bacon is crispy, onions are tender & chicken is almost done.
  • Step 3
    Place to potatoes with the broth in the pot over medium to high heat. Bring to a boil. When almost fork tender add in the carrots & celery. Then add in the chicken bacon onion mix. Turn down heat. You might need to add in water if need be.
  • Step 4
    Simmer over medium heat for another 15 minutes. Then add in the corn & the chicken Taste for seasoning. Add more salt & pepper if need be. Mix in the cream of chicken. Let cook for another 10-15 minutes. Chowder should be creamy & thick but not to thick.
