Ingredients
-
1/4 colive oil
-
1/4 cbutter
-
8 - 10bone in, with skin chicken thighs or could use breasts as well

·flour for browning chicken

·salt & pepper for seasoning chicken

5 clovegarlic, sliced

2 stalk(s)celery. sliced about 1/2 in thick
-
1 - 8 - 12 ozcrimini mushrooms, cleaned and sliced - medium

10baby carrots, sliced thick

1 largeonion, cut in half and sliced medium thickness

1 1/2red sweet pepper, sliced medium thickness
-
1green pepper, sliced medium thickness
-
1 1/2 tspcrushed thyme

1/2 tsptumeric
-
1bay leaf
-
1 1/2 tsporegano, dried

1 tspcrushed red pepper flakes or more to taste

1 - 20 ozcrushed tomatoes

1 - 14.5 ozwhole plum tomatoes, squeezed or 1 can chopped

2 Tbspwhite or brown sugar - optional

1 ccabernet merlot wine

·prepared rice or noodles
How to Make Chicken Cacciatore / My Way
- Remove the lid, and continue baking another 15 - 20 minutes.
You can now - either take the chicken out and place on a plate, and cook the sauce down to thicken up on the stove top, if you like a thicker sauce.
I then place the pasta or rice on each plate..add a thigh or two...then a ladle of veggie sauce over top, with a sprinkle of Parmesan cheese.
