I saw this recipe on Pinterest, and just had to try it. It was marvelous! After making it a couple of times, I have made a few changes so that it's even better, at least to my taste. Ingredients
- 3-4 cups cooked chicken, diced
- 1/2 cup mayonnaise or light mayonnaise
- 2 small avocados, diced
- 8 teaspoons fresh lime juice
- 1 teaspoon finely grated lime zest
- 1-2 dash salt, to taste
- 1/4 cup green onion, thinly sliced
- 1/2 cup finely chopped cilantro

Step 1Prepare the chicken - I usually cook a chicken, but you can also use a rotisserie chicken. Dice chicken into cubes. Mix chicken thoroughly with mayonnaise. Add remaining ingredients and blend carefully. Taste and adjust salt to taste.
