chicken and rice casserole
I first made this for my Fur Babies (3 Labrador Retrievers) when I was boarding them as we were going out of town, and I felt a little guilty because this was the first time they were being treated like 'dogs.' While I was putting it together my Dad came through the kitchen and was sneaking bites while he packed the car. Afterwards he asked why I had never fixed it for us and was the first to make the observation that my Babies were treated better than most people. Hope it's enjoyed by people and fur babies

Ingredients
- 1 - 3-3 1/2 pound chicken
- 1 - medium white onion cut into quarters
- 2 - stocks of celery cut into thirds
- 1 - lemon
- 2-21/2 - cups of cooked rice
- 1 1/2 cups english peas and carrots
How To Make chicken and rice casserole

Step 1Place chicken and veggies in a stockpot and cover with water. Add a couple of teaspoons of salt

Step 2Squeeze the lemon and place the pieces in the pot also

Step 3Bring to a boil then reduce heat and cook until done

Step 4Remove chicken to a plate and strain the broth to another pan to cook the rice and pour over the peas and carrots

Step 5Bone the chicken and place the meat in a BIG bowl. When the rice is done mix with the chicken and peas and carrots.

Step 6If making for people place in a casserole and top with bread crumbs , bake for 20-30 minutes til warmed through. Serve with a salad and garlic bread.

Step 7If making for Fur Babies place in baggies per meal to mix with kibble
