Another delicious recipe from the people at Taste of Home (their photo). This was in one of their cookbooks. I like everything about it and it is ready in less than 30 minutes. 06-27-14

Ingredients

  • 3 teaspoons chili powder
  • 1 teaspoon ground cumin
  • 1 teaspoon pepper
  • 1/4 teaspoon salt
  • 4 - chicken breast halves, skinless and boneless
  • 2 teaspoons canola oil
  • 1 can (15 oz.) black beans, rinsed and drained
  • 1 cup frozen corn
  • 1 cup salsa
  • 2 cups cooked brown rice

How To Make black bean chicken with rice

  • Step 1
    Combine the chili powder, cumin, pepper and salt; rub over chicken.
  • Step 2
    In a large nonstick skillet coated with cooking spray, brown chicken in oil on both sides. Stir in the beans, corn and salsa. Cover and cook over medium heat for 20-25 minutes.
  • Step 3
    Slice chicken; serve with rice and bean mixture.
