Ingredients

  • 6 - anaheim peppers
  • 1 pound ground chicken
  • 3 - eggs
  • 2 1/4 cups cups panko bread crumbs
  • 2 tablespoons finely chopped green onions
  • 2 - cloves garlic, minced
  • 1 tablespoon grated ginger root
  • 2 tablespoons soy sauce
  • 1/4 teaspoon toasted sesame seed oil
  • 1/2 cup grated jack cheese
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup olive oil

How To Make baked peppers stuffed with ginger chicken

  • Step 1
    Preheat oven to 375 degrees.
  • Step 2
    Cut peppers lengthwise in half and remove seeds. Set aside and make filling.
  • Step 3
    For filling mix chicken with one egg and 1/4 cup Panko bread crumbs. Mix in onions, ginger, soy sauce and sesame seed oil. Combine chicken mixture with cheese.
  • Step 4
    Stuff each pepper half with chicken. Press two halves together.
  • Step 5
    In a shallow bowl beat remaining eggs with 1 tablespoon of water, salt and pepper. Dip peppers in egg mixture and then roll in remaining Panko bread crumbs patting lightly to coat.
  • Step 6
    Place on a oiled baking sheet, drizzle with oil and place in preheated oven. Bake for 35-40 minutes until browned.
