Ingredients
- 4 - boeless skinless chicken breast halves
- 2 tablespoons butter
- 1/2 cup sliced celery
- 1 large onion, sliced
- 1 medium green bell pepper, cut into 1/2 inch pieces
- 1 - 8 ounce can pineapple tidbits unsweetened, undrained
- 8 ounces no salt added tomatoe sauce
- 1 tablespoon cornstarch
- 1/4 cup soysauce
- 2 tablespoons sherry
- 1/4 teaspoon ground ginger
- 3 cups cooked rice no salt or fat

Step 1Cut chicken into bite size pieces. allow large skillet non stick to heat medium high heat 2 miutes. melt butter in skillet; add chicken, and stir fry 4 to 5 minutes or until lightly browned. stir in vegetables; cover, reduce heat, and simmer 5 minutes ot till vegetables are crisp tender.

Step 2Drain pineapple tidbits, reserving 1/4 cup liquid. set pineapple aside. combine the reserved pineapple juice and remaining ingrediants except rice; pour over chicken mixture. cook until mixture is slightly thickened.

Step 3Combine rice and pieapple. Serve chicked mixture over pineapple rice mixture. serve
