1Cut chicken into bite size pieces. allow large skillet non stick to heat medium high heat 2 miutes. melt butter in skillet; add chicken, and stir fry 4 to 5 minutes or until lightly browned. stir in vegetables; cover, reduce heat, and simmer 5 minutes ot till vegetables are crisp tender.
2Drain pineapple tidbits, reserving 1/4 cup liquid. set pineapple aside. combine the reserved pineapple juice and remaining ingrediants except rice; pour over chicken mixture. cook until mixture is slightly thickened.
3Combine rice and pieapple. Serve chicked mixture over pineapple rice mixture. serve
