This was my mom's recipe for curry chicken. She came up with the idea of adding pureed apples to the sauce to give it thickness and sweetness. It was a hit from the start, and still is.

    olive oil, extra virgin
  • 4
    chicken breast filets
  • 1/2 tsp
    garlic, minced
  • 2 c
    applesauce
  • 1 1/2 tsp
    curry powder
  • ·
    salt and pepper to taste

How to Make Apple Curry Chicken

Step-by-Step

  1. Cut the chicken fillets into bite size pieces.
  2. In a saucepan over low heat add the olive oil and garlic and stir for a minute. Add the chicken pieces and let them cook for about 15 minutes stirring once or twice.
  3. Add the applesauce, curry powder, salt and pepper and stir.
    Bring it to the boil then reduce the heat and let it simmer for 20 minutes or till the sauce thickens and chicken pieces are tender.
    Serve over white rice.
