apple curry chicken
This was my mom's recipe for curry chicken. She came up with the idea of adding pureed apples to the sauce to give it thickness and sweetness. It was a hit from the start, and still is.

Ingredients
- 1 tablespoon olive oil, extra virgin
- 4 - chicken breast filets
- 1/2 teaspoon garlic, minced
- 2 cups applesauce
- 1 1/2 teaspoons curry powder
- - salt and pepper to taste
How To Make apple curry chicken

Step 1Cut the chicken fillets into bite size pieces.

Step 2In a saucepan over low heat add the olive oil and garlic and stir for a minute. Add the chicken pieces and let them cook for about 15 minutes stirring once or twice.

Step 3Add the applesauce, curry powder, salt and pepper and stir. Bring it to the boil then reduce the heat and let it simmer for 20 minutes or till the sauce thickens and chicken pieces are tender. Serve over white rice.
