This black bean sweet potato casserole is easy to prepare yet nutritious and delicious. It is great by itself, as a topping on a potato, or as a burrito filling.

Ingredients

  • 3 cups cooked and mashed (or cubed) sweet potatoes
  • 1 can corn, drained
  • 1 can sliced carrots,drained
  • 2 cans black beans, drained and rinsed
  • 2 tablespoons unsweetened almond milk
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon ground cumin
  • 1 medium onion, chopped
  • 8 ounces tomato sauce

How To Make sweet potato black bean casserole

  • Step 1
    Mix all ingredients (EXCEPT sweet potatoes - if mashed) together in a bowl until well combined. If using cubed sweet potatoes, combine all ingredients together.
  • Step 2
    Put into a 9x13 pan or a casserole dish.
  • Step 3
    If using mashed sweet potatoes - spread the mashed potatoes evenly on top of the mixture.
  • Step 4
    Bake at 350 degrees until the filling is hot, about 40 mins.
