This black bean sweet potato casserole is easy to prepare yet nutritious and delicious. It is great by itself, as a topping on a potato, or as a burrito filling.

Ingredients
- 3 cups cooked and mashed (or cubed) sweet potatoes
- 1 can corn, drained
- 1 can sliced carrots,drained
- 2 cans black beans, drained and rinsed
- 2 tablespoons unsweetened almond milk
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground allspice
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon black pepper
- 1/2 teaspoon ground cumin
- 1 medium onion, chopped
- 8 ounces tomato sauce
How To Make sweet potato black bean casserole

Step 1Mix all ingredients (EXCEPT sweet potatoes - if mashed) together in a bowl until well combined. If using cubed sweet potatoes, combine all ingredients together.

Step 2Put into a 9x13 pan or a casserole dish.

Step 3If using mashed sweet potatoes - spread the mashed potatoes evenly on top of the mixture.

Step 4Bake at 350 degrees until the filling is hot, about 40 mins.
