lovely quinoa casserole

I used a packaged Quinoa mix. When the cherry tomatoes bake-they get sweet-yum! We all loved this recipe I made up one night. Remember-simple tip to cut a basket of cherry tomatoes-place the tomatoes in a dish-cover with a same sized dish, use a serrated knife to pass through the middle, placing your hand on the top dish.

Ingredients
- 1 package quinoa, cooked ( i used roland 'quinoa with roasted garlic)
- 1 - 1 to 1 1/2 (your choice) basket of cherry tomatoes, halved
- 1 can white beans, rinsed and drained
- 1half - lemon
- 1 half - lime
- 1/4 cup extra virgin olive oil
- 1 teaspoon fine grain salt to taste
- pinch freshly ground pepper to taste
- 1/3 cup basil and cilantro- mixed-chopped ( i used fresh from my garden)
- 1/3 cup feta cheese, crumbled
- 3/4 cup italian bread crumbs

Step 1Prepare Quinoa according to package directions.

Step 2cut the tomatoes in half

Step 3juice 1 lemon half, 1 lime half

Step 4measure and set aside 1/4 cup extra virgin olive oil

Step 5chop the basil and cilantro

Step 6rinse and drain the white beans

Step 7Preheat oven to 350 degrees.

Step 8In a large bowl, gently mix all the ingredients including salt and pepper- EXCEPT the bread crumbs.

Step 9Transfer to a casserole dish. Top with the bread crumbs.

Step 10Bake at 350 degrees 20-25 minutes.
