lovely quinoa casserole

I used a packaged Quinoa mix. When the cherry tomatoes bake-they get sweet-yum! We all loved this recipe I made up one night. Remember-simple tip to cut a basket of cherry tomatoes-place the tomatoes in a dish-cover with a same sized dish, use a serrated knife to pass through the middle, placing your hand on the top dish.

Ingredients

  • 1 package quinoa, cooked ( i used roland 'quinoa with roasted garlic)
  • 1 - 1 to 1 1/2 (your choice) basket of cherry tomatoes, halved
  • 1 can white beans, rinsed and drained
  • 1half - lemon
  • 1 half - lime
  • 1/4 cup extra virgin olive oil
  • 1 teaspoon fine grain salt to taste
  • pinch freshly ground pepper to taste
  • 1/3 cup basil and cilantro- mixed-chopped ( i used fresh from my garden)
  • 1/3 cup feta cheese, crumbled
  • 3/4 cup italian bread crumbs

How To Make lovely quinoa casserole

  • Step 1
    Prepare Quinoa according to package directions.
  • Step 2
    cut the tomatoes in half
  • Step 3
    juice 1 lemon half, 1 lime half
  • Step 4
    measure and set aside 1/4 cup extra virgin olive oil
  • Step 5
    chop the basil and cilantro
  • Step 6
    rinse and drain the white beans
  • Step 7
    Preheat oven to 350 degrees.
  • Step 8
    In a large bowl, gently mix all the ingredients including salt and pepper- EXCEPT the bread crumbs.
  • Step 9
    Transfer to a casserole dish. Top with the bread crumbs.
  • Step 10
    Bake at 350 degrees 20-25 minutes.
