Ingredients

  • 12 ounces lobster diced in 1/2" chunks
  • 1/2 cup low sodium fat free ricotta cheese (can sub cottage cheese)
  • 2 ounces fresh goat cheese
  • 3 tablespoons nutritional yeast
  • 2 packages shirataki tofu noodles (can sub with regular pasta)
  • 1 - head cauliflower riced
  • 2 tablespoons ground flax seed
  • - salt and pepper to taste

How To Make healthy lobster mac & cheese

  • Step 1
    Set your oven to broil. Line a baking dish with foil. Spray with non stick cooking spray. Rinse your lobster/langostino under warm water (thaw if needed). Drain and rinse your tofu noodles. Microwave your noodles for 2 minutes. Pat the noodles dry with a paper towel. In a bowl mix your ricotta, riced cauliflower, tofu noodles, nutritional yeast and salt/pepper. Toss your lobster with your noodle/ricotta/cauliflower mixture. Spread the mixture into your baking dish. Sprinkle with your flax seed. Crumble goat cheese over the top. Broil for 10-15 minutes or until slightly crispy on top. Serve warm. If you need a temperature for the broiler then around 400 degrees but keep an eye on it so it doesn't burn.
