great and easy sauerkraut casserole
This recipe will even turn those who do NOT like and cannot tolerate sauerkraut into lovers of this casserole. It is absolutely so easy it can be done on the stovetop or in the microwave or oven. I have used it OFTEN.

Ingredients
- 1 1/2 cups rice (brown, white, jasmine or basmati)
- 3 1/2 cups water to cook rice
- 1 can frank's kraut with caraway seeds
- 1 pound ground turkey
- 1 can golden mushroom or cream of mushroom soup
- - salt to season rice (use sparingly. sauerkraut is salty)
How To Make great and easy sauerkraut casserole
-
Step 1First cook rice in 3 1/2 cups water with a small amount of salt (about half of what you would normally use) in rice cooker or on stove top for recommended time until tender.
-
Step 2While rice is cooking, crumble and brown ground turkey and drain of juices.
-
Step 3Open kraut and mix in with the cooked rice, juice and all. Mix in the browned meat, and the soup undiluted.
-
Step 4You basically can eat it as soon as all the ingredients are combined (my kids do this) or you can put it in a casserole dish and bake until bubbly or microwave until heated through. It gets even better with time, and the next day the flavors have really had time to mingle.
