This is from my Mom's old Fannie Farmer cookbook from the 1960's. I adapted it for the crockpot. Super easy and very good.

Slow Cooker Crock Pot

Ingredients

  • 2
    large russet potatoes, sliced thin
  • 1/2
    large sweet onion, chopped
  • 8 oz
    sharp cheddar cheese, shredded
  • 1 lb
    cooked ham, chopped
  • 1 stick
    butter
  • ·
    flour
  • ·
    salt
  • ·
    pepper
  • ·
    milk

How to Make Country style scalloped potatoes and ham

Step-by-Step

  1. melt 2T butter in bottom of crockpot
  2. layer 1/3 of the sliced potatoes, 1/3 of the chopped onion, 1/3 of the shredded cheese in crockpot.
  3. Sprinkle flour, salt, pepper and 2T butter over 1st layer
  4. repeat layering all of the above for a total of 3 layers
  5. add enough milk until you see the milk show through the top layer.
  6. Heat on high in crockpot until the milk simmers, then reduce to low for 6 hours
