Ingredients
- 2 tablespoons canola oil
- 1 - onion, chopped
- 3 teaspoons minced garlic
- 2 pounds ground turkey or lean ground beef
- 1 - 28 oz can crushed tomatoes
- 2 tablespoons chili powder
- 1 teaspoon cumin
- 1/2 teaspoon each, salt and pepper
- 2 - 16 oz cans red kidney beans, drained
- 1 box jiffy corn muffin mix
- 1 cup shredded mexican cheese
How To Make chili & cornbread bake

Step 1In lg pot, over med-high heat, heat oil. saute onion and garlic until tender. Add ground turkey or beef. Brown 10 mins.

Step 2Add remaining ingredients except corn muffin mix and cheese. Cover and simmer on low for 20 mins. Heat oven to 375. Spray a 9" x 13: pan w/ cooking spray. Spoon chili into pan.

Step 3In bowl, prepare muffin mix as directed, stir in cheese. Spread over chili. Bake 20 mins.
