I recently visited family in Kansas who own Prairie Wind Hunting Club, and we came home with a cooler full of venison and buffalo. I wanted to create something with the ground venison that would please everyone in my family (even those that "don't like game"). This recipe CAN be made with ground beef, but I prefer the lean venison, and this has hardly any fat, so it is also a healthy choice for a quick dinner.

Ingredients For martharaydeen's sloppy does (venison joes)

  • 2 Tbsp
    butter or olive oil (i used butter)
  • 2 lb
    venison, ground (can sub. beef)
  • 1 md
    onion, diced
  • 1/2 md
    green bell pepper, diced
  • 1/2 md
    red bell pepper, diced
  • 1
    celery rib, chopped
  • 4 clove
    garlic
  • 1 tsp
    salt - sprinkled over and mixed in
  • 1/4 c
    red wine (i used shiraz)
  • 1/4 c
    brown sugar
  • 2 Tbsp
    red wine vinegar
  • 1/2 c
    water (possibly more, if needed)
  • 1 c
    ketchup
  • 1 c
    crushed tomatoes
  • 1 sm
    can tomato paste
  • 2 Tbsp
    worcestershire sauce
  • 1 Tbsp
    chili powder
  • 1 Tbsp
    yellow mustard (or 1tsp dry mustard)

How To Make martharaydeen's sloppy does (venison joes)

    Melt the butter/oil over medium heat, then add the venison and cook JUST until browned. Add the next six ingredients and cook just until the veggies get softened, stirring often.

    Add the wine, and with the lid off, let most of the liquid get absorbed. Add all of the remaining ingredients and stir well. Cover and simmer over medium heat for 30 minutes, adding extra water if needed and stirring occasionally.

    Remove lid and let the mixture thicken up a little while it cools to serving temperature.

    Spoon a healthy serving of Sloppy Doe mixture onto buns of your choice. Be Happy!
