delicious quinoa and kale patties

My daughter gave me this recipe and it was delicious!! She has to eat gluten free, but the whole family enjoyed these patties. Try them, you might be surprised how good they taste. You can eat them on a bun, top them with salsa, sour cream, or guacamole. The possibilities are endless.

Ingredients

  • 1 cup quinoa, cooked according to pkg. directions
  • 3 large eggs, whisked
  • 1/2 cup grated parmesan cheese
  • 1/2 - onion, diced
  • 3 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1-2 cup fresh kale, chopped and steamed
  • 1 cup gluten free bread crumbs (regular if gf not necessary)

How To Make delicious quinoa and kale patties

  • mixing cooked quinoa with eggs, parmesan cheese, onion, garlic, and salt.
    Step 1
    In a large bowl, mix cooked quinoa, eggs, parmesan cheese, onions, garlic and salt.

    Add steamed kale and breadcrumbs and lightly mix together. Let everything sit for 10 minutes to absorb liquid (batter should be moist).

    Form into patties. Place patties on a greased cookie sheet.

    Bake at 400 degrees for 10-15 minutes. Turn patties over and cook until both sides are brown. Serve on a gf hamburger bun, with salsa, sour cream, quacamole, or lemon juice.

    Optional: You can also roast kale in the oven drizzled with a little olive oil, salt and pepper to taste, to make a tasty kale chip to snack on. Just cook until as crispy as desired, turning as needed.
