zucchini squash-meat casserole

I've been to the auction again and bought old recipe books. Can't help it I love old recipes. Here's one for all that summer squash we are gathering.

Ingredients

  • 2 pounds zucchini squash
  • 1 1/2 pounds bulk sausage or ground beef
  • 1/4 cup finely chopped onion
  • 2 - eggs, beaten
  • 1/2 cup fine cracker crumbs
  • 1/2 teaspoon salt
  • 1/4 teaspoon thyme
  • 1/2 cup cubed cheese

How To Make zucchini squash-meat casserole

  • Step 1
    Wash zucchini and trim ends. Cut in thick slices and cook in small amount of boiling water for 10 minutes. Drain, chop coarsely
  • Step 2
    Brown meat and onions in a skillet, drain off fat.
  • Step 3
    Combine squash, meat, cracker crumbs, eggs, seasonings and half of the cheese.
  • Step 4
    Place in shallow greased baking dish. Sprinkle remaining cheese over top.
  • Step 5
    Bake at 350 degrees for 30 to 40 minutes.
