zucchini squash-meat casserole
I've been to the auction again and bought old recipe books. Can't help it I love old recipes. Here's one for all that summer squash we are gathering.

Ingredients
- 2 pounds zucchini squash
- 1 1/2 pounds bulk sausage or ground beef
- 1/4 cup finely chopped onion
- 2 - eggs, beaten
- 1/2 cup fine cracker crumbs
- 1/2 teaspoon salt
- 1/4 teaspoon thyme
- 1/2 cup cubed cheese
How To Make zucchini squash-meat casserole

Step 1Wash zucchini and trim ends. Cut in thick slices and cook in small amount of boiling water for 10 minutes. Drain, chop coarsely

Step 2Brown meat and onions in a skillet, drain off fat.

Step 3Combine squash, meat, cracker crumbs, eggs, seasonings and half of the cheese.

Step 4Place in shallow greased baking dish. Sprinkle remaining cheese over top.

Step 5Bake at 350 degrees for 30 to 40 minutes.
