I've been to the auction again and bought old recipe books.
Can't help it I love old recipes.
Here's one for all that summer squash we are gathering.

  • 2 lb
    zucchini squash
  • 1 1/2 lb
    bulk sausage or ground beef
  • 1/4 c
    finely chopped onion
  • 2
    eggs, beaten
  • 1/2 c
    fine cracker crumbs
  • 1/2 tsp
  • 1/4 tsp
  • 1/2 c
    cubed cheese

How to Make Zucchini Squash-meat Casserole


  1. Wash zucchini and trim ends. Cut in thick slices and cook in small amount of boiling water for 10 minutes.
    Drain, chop coarsely
  2. Brown meat and onions in a skillet, drain off fat.
  3. Combine squash, meat, cracker crumbs, eggs, seasonings and half of the cheese.
  4. Place in shallow greased baking dish.
    Sprinkle remaining cheese over top.
  5. Bake at 350 degrees for 30 to 40 minutes.
