I've been to the auction again and bought old recipe books.
Can't help it I love old recipes.
Here's one for all that summer squash we are gathering.

Ingredients

2 lb
zucchini squash
1 1/2 lb
bulk sausage or ground beef
1/4 c
finely chopped onion
2
eggs, beaten
1/2 c
fine cracker crumbs
1/2 tsp
salt
1/4 tsp
thyme
1/2 c
cubed cheese

How to Make Zucchini Squash-meat Casserole

Step-by-Step

  • 1Wash zucchini and trim ends. Cut in thick slices and cook in small amount of boiling water for 10 minutes.
    Drain, chop coarsely
  • 2Brown meat and onions in a skillet, drain off fat.
  • 3Combine squash, meat, cracker crumbs, eggs, seasonings and half of the cheese.
  • 4Place in shallow greased baking dish.
    Sprinkle remaining cheese over top.
  • 5Bake at 350 degrees for 30 to 40 minutes.
