I always serve them on a nice bed of rice...but this can also be an appetizer...

Ingredients

  • 1 1/2 lb
    ground beef
  • 2/3 c
    cracker crumbs
  • 1/3 c
    onion, minced
  • 1
    egg
  • 1/2 tsp
    salt
  • 1/4 tsp
    ginger
  • 1/4 c
    milk (for meatballs)
  • 1 Tbsp
    shortening
  • 2 Tbsp
    corn starch
  • 1/2 c
    brown sugar, packed
  • 1 oz
    (14 oz) can pineapple chunks in syrup, drained (reserve syrup)
  • 1/3 c
    vinegar
  • 1 tsp
    soy sauce, low sodium
  • 1/3 c
    green pepper, chopped

How to Make Waikiki Meatballs

Step-by-Step

  1. Mix meat, crumbs, onion, egg, salt, ginger and milk. Shape into balls.
  2. Melt shortening, brown and cook meatballs. Remove meat and keep warm, remove fat.
  3. Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar, and soy sauce until smooth. Cook, stirring, until boiling. Boil and stir one minute.
  4. Add meatballs pineapple and green pepper, heat through.
