waikiki meatballs
with this recipe - you can mix and match your veggies, - like carrots, red 7 yellow peppers, even bean spronts... I always serve them on a nice bed of rice...but this can also be an appetizer...

Ingredients
- 1 1/2 pounds ground beef
- 2/3 cup cracker crumbs
- 1/3 cup onion, minced
- 1 - egg
- 1/2 teaspoon salt
- 1/4 teaspoon ginger
- 1/4 cup milk (for meatballs)
- 1 tablespoon shortening
- 2 tablespoons corn starch
- 1/2 cup brown sugar, packed
- 1 ounce (14 oz) can pineapple chunks in syrup, drained (reserve syrup)
- 1/3 cup vinegar
- 1 teaspoon soy sauce, low sodium
- 1/3 cup green pepper, chopped
How To Make waikiki meatballs

Step 1Mix meat, crumbs, onion, egg, salt, ginger and milk. Shape into balls.

Step 2Melt shortening, brown and cook meatballs. Remove meat and keep warm, remove fat.

Step 3Mix cornstarch and sugar. Stir in reserved pineapple syrup, vinegar, and soy sauce until smooth. Cook, stirring, until boiling. Boil and stir one minute.

Step 4Add meatballs pineapple and green pepper, heat through.
