very veggie spaghetti sauce mmb
I am trying to incorporate more veggies into my meals. This is an easy way to do it. I like to serve it over baked spaghetti squash. You can easily omit the meat and make it vegetarian, or add some Hot Italian sausage to kick it up a bit.

Ingredients
- 1 pound ground beef
- 3 cloves garlic, minced
- 1/2 - onion, diced
- 2 small zucchini, diced
- 1 large carrot, grated
- 1 - red bell pepper, diced
- 8 ounces mushrooms, sliced
- 28 ounces canned diced tomatoes
- 56 ounces canned tomato sauce
- 2 teaspoons basil, dried
- 2 teaspoons thyme, dried
- 2 teaspoons rosemary, dried
- 1 tablespoon oregano, dried

Step 1In a large pan, brown the ground beef, garlic and onion together until beef is no longer pink. Drain the fat off.

Step 2Add the veggies and herbs and simmer until the veggies are tender.

Step 3These are rough estimates of amounts. Use more or less to suit your tastes.

Step 4** In the summer when the garden is coming in, I can tomatoes and grate zucchini for the freezer. I also dehydrate herbs for the winter.
