very veggie spaghetti sauce mmb

I am trying to incorporate more veggies into my meals. This is an easy way to do it. I like to serve it over baked spaghetti squash. You can easily omit the meat and make it vegetarian, or add some Hot Italian sausage to kick it up a bit.

Ingredients

  • 1 pound ground beef
  • 3 cloves garlic, minced
  • 1/2 - onion, diced
  • 2 small zucchini, diced
  • 1 large carrot, grated
  • 1 - red bell pepper, diced
  • 8 ounces mushrooms, sliced
  • 28 ounces canned diced tomatoes
  • 56 ounces canned tomato sauce
  • 2 teaspoons basil, dried
  • 2 teaspoons thyme, dried
  • 2 teaspoons rosemary, dried
  • 1 tablespoon oregano, dried

How To Make very veggie spaghetti sauce mmb

  • Step 1
    In a large pan, brown the ground beef, garlic and onion together until beef is no longer pink. Drain the fat off.
  • Step 2
    Add the veggies and herbs and simmer until the veggies are tender.
  • Step 3
    These are rough estimates of amounts. Use more or less to suit your tastes.
  • Step 4
    ** In the summer when the garden is coming in, I can tomatoes and grate zucchini for the freezer. I also dehydrate herbs for the winter.
