I am trying to incorporate more veggies into my meals. This is an easy way to do it.
I like to serve it over baked spaghetti squash.
You can easily omit the meat and make it vegetarian, or add some Hot Italian sausage to kick it up a bit.

ground beef
3 clove
garlic, minced
onion, diced
2 small
zucchini, diced
1 large
carrot, grated
red bell pepper, diced
8 oz
mushrooms, sliced
28 oz
canned diced tomatoes
56 oz
canned tomato sauce
2 tsp
basil, dried
2 tsp
thyme, dried
2 tsp
rosemary, dried
1 Tbsp
oregano, dried

How to Make Very Veggie Spaghetti Sauce MMB


  • 1In a large pan, brown the ground beef, garlic and onion together until beef is no longer pink. Drain the fat off.
  • 2Add the veggies and herbs and simmer until the veggies are tender.
  • 3These are rough estimates of amounts. Use more or less to suit your tastes.
  • 4** In the summer when the garden is coming in, I can tomatoes and grate zucchini for the freezer. I also dehydrate herbs for the winter.
