This recipe is a meal in itself. I found this recipe in my Better Homes and Garden Ground meat Cookbook c1973.
I have made this recipe and it is tasty. I just love the older recipes minus the calorie reduce ingredients. Enjoy!

6 medium green peppers
1 lb ground beef
1/3 cup of chopped onions
1-16 oz can tomatoes, cut up (or 14 oz-19 oz can)
1/2 cup uncooked long grain rice
1 tsp worchestershire sauce
1 cup shredded sharp processed cheese

How to Make Stuffed Pepper Cups


  • 1Cut off tops of green pepper; remove seeds and membrane
  • 2scallop edges (optional)
  • 3Precook peppers in boiling salted water 5 minutes; drain (for crisp peppers omit precooking)
  • 4Sprinkle inside of peppers generously with salt
  • 5Brown meat with onion. Add 1/2 tsp salt and dash of pepper
  • 6Stir in tomatoes. rice. and a 1/2 cup water, and Worchestershire sauce
  • 7Cover; simmer 15 minutes; stir in cheese
  • 8Stuff peppers
  • 9Place stuffed peppers in a 10x6x1 1/2 inch baking dish
  • 10Bake at 350F 20-25 minutes
  • 11Serves 6
