This recipe is a meal in itself. I found this recipe in my Better Homes and Garden Ground meat Cookbook c1973.
I have made this recipe and it is tasty. I just love the older recipes minus the calorie reduce ingredients. Enjoy!

  • ·
    6 medium green peppers
  • ·
    1 lb ground beef
  • ·
    1/3 cup of chopped onions
  • ·
    1-16 oz can tomatoes, cut up (or 14 oz-19 oz can)
  • ·
    1/2 cup uncooked long grain rice
  • ·
    1 tsp worchestershire sauce
  • ·
    1 cup shredded sharp processed cheese

How to Make Stuffed Pepper Cups


  1. Cut off tops of green pepper; remove seeds and membrane
  2. scallop edges (optional)
  3. Precook peppers in boiling salted water 5 minutes; drain (for crisp peppers omit precooking)
  4. Sprinkle inside of peppers generously with salt
  5. Brown meat with onion. Add 1/2 tsp salt and dash of pepper
  6. Stir in tomatoes. rice. and a 1/2 cup water, and Worchestershire sauce
  7. Cover; simmer 15 minutes; stir in cheese
  8. Stuff peppers
  9. Place stuffed peppers in a 10x6x1 1/2 inch baking dish
  10. Bake at 350F 20-25 minutes
  11. Serves 6
