stuffed pepper cups
This recipe is a meal in itself. I found this recipe in my Better Homes and Garden Ground meat Cookbook c1973. I have made this recipe and it is tasty. I just love the older recipes minus the calorie reduce ingredients. Enjoy!

Ingredients
- - 6 medium green peppers
- - 1 lb ground beef
- - 1/3 cup of chopped onions
- - 1-16 oz can tomatoes, cut up (or 14 oz-19 oz can)
- - 1/2 cup uncooked long grain rice
- - 1 tsp worchestershire sauce
- - 1 cup shredded sharp processed cheese
How To Make stuffed pepper cups

Step 1Cut off tops of green pepper; remove seeds and membrane

Step 2scallop edges (optional)

Step 3Precook peppers in boiling salted water 5 minutes; drain (for crisp peppers omit precooking)

Step 4Sprinkle inside of peppers generously with salt

Step 5Brown meat with onion. Add 1/2 tsp salt and dash of pepper

Step 6Stir in tomatoes. rice. and a 1/2 cup water, and Worchestershire sauce

Step 7Cover; simmer 15 minutes; stir in cheese

Step 8Stuff peppers

Step 9Place stuffed peppers in a 10x6x1 1/2 inch baking dish

Step 10Bake at 350F 20-25 minutes
