southwestern beef chili stew( crockpot )

I love my crockpot and use it often! I have a group here too. We love Mexican recipes but not too spicy. This one is a great meal warmer you will enjoy.

Ingredients

  • 2 pounds lean beef cubes cut into bite size chunks 1/2 inch
  • 2 cups onions chopped
  • 4 cloves garlic minced
  • 2 cans fire roasted canned tomatoes (14.5 each)
  • 4 cans diced green chilies ( i use mild) 4 ounce size
  • 2 cups corn frozen
  • 3 teaspoons oregano, dried ( crushed)
  • 2 teaspoons cumin ground
  • 2 teaspoons chili powder
  • 1 teaspoon kosher salt
  • 1/2 teaspoon red pepper flakes/ground
  • 1 tablespoon cocoa, unsweetened
  • 3 tablespoons brown sugar
  • 4 tablespoons yellow cornmeal (added at end then simmered 20-25 minutes

How To Make southwestern beef chili stew( crockpot )

  • Step 1
    Brown beef in a little olive oil
  • Step 2
    Mix all spices and salt and red crushed pepper with the tomatoes and green chilies. Add cocoa to this and corn and garlic and onions
  • Step 3
    Place beef in bottom of crockpot
  • Step 4
    Cover with the mixture of spices and veggies
  • Step 5
    Cover and simmer on LOW about 6 hours
  • Step 6
    Mix in corn Meal to sauce and beef
  • Step 7
    Cover continue to simmer about 20-25 more minutes to thicken up
  • Step 8
    Serve with warm bread or biscuits I like this over cooked rice or noodles.
