2 clovegarlic, chopped fine
-
1red bell pepper, chopped
-
1green or yellow pepper, chopped

2carrots, cubed
-
1 lblean ground beef
-
1/2 tspcumin
-
1 can(s)28 oz. can crushed or diced tomatoes

2 cwater or stock

·salt and pepper

3 can(s)canned beans - black, kidney, pinto, or chickpeas , etc. drained
How to Make Scott's Three Bean Chili
- Heat the oil in large pot or Dutch oven over moderate heat. Add the onion, bell pepper and carrots, cover and cook, stirring occasionally until the vegetables are soft, about 10 minutes.
- Add the cumin and cook, stirring, for 1 minute.
- Add the ground beef and cook, breaking up the meat with a spoon, until the meat is no longer pink. Stir in the tomatoes, water, chili powder and red pepper flakes, oregano and salt and pepper. Lower heat and simmer, partially covered, stirring from time to time, for 30 minutes.
- Stir in the beans and continue cooking, partially covered, 20 minutes longer. Season, to taste, with salt and pepper.
