I found this in an older cooking magazine and when I tried it, it was sooooo good! It you like Reuben's you will love this easy dish!

Ingredients

  • 20 oz
    frozen hash browns
  • 1 1/2 lb
    thinly sliced corned beef
  • 1/2 c
    thousand island dressing
  • 1 1/2 c
    sauerkraut
  • 1 lb
    sliced swiss cheese

How to Make Reuben Casserole

Step-by-Step

  1. In a 13" casserole, spray some non-stick spray. Lay in 20 oz. of frozen hash browns. Bake at 450 for 10-12 minutes.
  2. Lay on the corned beef. If it's thin sliced, double it and make sure the meat overlays itself.
  3. Spread on the dressing.
  4. Spread the sauerkraut on and make sure it's even.
  5. Lay down the cheese. If you use shredded, you can make the pieces smaller. But these nice big slices kind of help you "divvy" up the portions. Each of the 6 pieces is perfect with a salad and some dark or light rye bread.
  6. Bake an additional 20-25 minutes. When you have leftovers, they are perfect for a zipper bag (once cooled)and stacked in the freezer. If you love Reuben's, you will love this.
