I make this ahead and freeze. On the day I want to serve this, I simply thaw the meat mixture, layer in tortillas, top with cheese, and bake! I serve this with Mexican Rice

ground beef
1 medium
onion, chopped
1 Tbsp
chili powder
1 tsp
cumin
1 tsp
garlic
1/2 tsp
oregano, dried
1/2 tsp
crushed red pepper
16 oz
tomato sauce
1 can(s)
beans (any variety)
1 can(s)
whole kernel corn
1 can(s)
(4.5 oz) green chilies
2-3 large
tortillas
2 c
shredded cheese (of your choice)

How to Make Quesadilla Casserole

Step-by-Step

  • 1Cook together ground beef and chopped onion.
  • 2In a large mixing bowl, mix together the meat mixture and all of the ingredients, except tortillas and cheese.
  • 3FOR FREEZER VERSION: Place this mixture in a freezer-safe zip top bag or container. Thaw on day of serving.
  • 4Layer tortillas, meat, cheese and repeat, ending with cheese.
    Bake at 400 until bubbly and cheese is melted and golden brown.
