I make this ahead and freeze. On the day I want to serve this, I simply thaw the meat mixture, layer in tortillas, top with cheese, and bake! I serve this with Mexican Rice

Ingredients
- 1 pound ground beef
- 1 medium onion, chopped
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon garlic
- 1/2 teaspoon oregano, dried
- 1/2 teaspoon crushed red pepper
- 16 ounces tomato sauce
- 1 can beans (any variety)
- 1 can whole kernel corn
- 1 can (4.5 oz) green chilies
- 2-3 large tortillas
- 2 cups shredded cheese (of your choice)
How To Make quesadilla casserole

Step 1Cook together ground beef and chopped onion.

Step 2In a large mixing bowl, mix together the meat mixture and all of the ingredients, except tortillas and cheese.

Step 3FOR FREEZER VERSION: Place this mixture in a freezer-safe zip top bag or container. Thaw on day of serving.

Step 4Layer tortillas, meat, cheese and repeat, ending with cheese. Bake at 400 until bubbly and cheese is melted and golden brown.
