Having a large family, I've learned to make larger meals. This is a large meatloaf that you can either cut the recipe in half or freeze some for a quick microwave meal later.

Ingredients

  • 1 pound ground beef or chuck 93% lean
  • 1 pound ground turkey
  • 2 - eggs
  • 1 small oinion chopped
  • 3-4 pinches parsley (fresh is best but dried is ok)
  • 1/4 cup chopped celery
  • 3-4 slices dried bread or equal amount in dried bread crumbs
  • 1 can 12 oz tomato sauce
  • 2-3 dashes salt
  • 3-4 dashes ground black pepper

How To Make meat loaf

  • Step 1
    Mix all ingredients by hand in large bowl until well blended.
  • Step 2
    Put in casserole dish with lid and form with hands to flatten top and move loaf away from sides of dish.
  • Step 3
    Bake at 425 degrees F 45 minutes, remove lid and bake another 15 minutes or so until top browns nicely.
  • Step 4
    I serve with some kind of potatoes, mashed or boiled and a vegetable. I usually serve a green veggie, leafy or otherwise. Squirting a bit of ketchup on top of the meatloaf adds more zing to it if you so choose.
