kj's meat pockets
My husband was raised by his Armenian grandfather who made these little meat pies. I make this version and Stige really enjoys them. Am sure they aren't like the ones he grew up with but what the heck, he likes!

Ingredients
- 1 pound ground beef
- 1 large onion-chopped fine
- 1 teaspoon salt, pepper
- 1 tablespoon minced garlic-from jar
- 1 teaspoon to rushed red pepper spice
- 1/2 tablespoon sweet basil
- 1/2 tablespoon parsley
- 1 package fajita seasoning
- - olive oil for pan
- 2 packages jumbo biscuits
- - melted butter to brush on each pocket
- 1 cup various bell peppers-chopped fine
How To Make kj's meat pockets

Step 1Using my cast iron skillet place the olive oil in and the ground beef.

Step 2Add the chopped onions and cook the beef until it is like taco beef, cutting it up as cooking. Add the chopped peppers and continue to cook.

Step 3Add the spices and continue to cook until the meat is not pink, but completely cooked. Turn off heat

Step 4Open the biscuits and either use two together or just use one. Roll out the biscuit to about 5-8 inches round.

Step 5Place ladle of meat mixture on one side leaving the edges clear. Fold over and seal the two edges with fork.

Step 6Brush with melted butter and bake in oven til golden brown, 10-15 minutes. May need to turn over and brown the other side.

Step 7Can also fry in skillet with little olive oil, no need to deep fry unless want too.
