This is our favorite spagetti dinner...we make it extra special by adding everything but the kitchen sink into it. Yes, there are a lot of ingredients, and yes it takes awhile, so please don't be put off, it is well worth the effort. It has layers of flavor that taste even better the next day after chilling in the fridge. I hope that you enjoy this recipe.

Ingredients

  • SPICY TOMATO AND VEGETABLE SAUCE
  • 1 cup chopped sweet onion
  • 4 cloves garlic, minced
  • 1/2 cup chopped sweet green pepper
  • 1/2 cup chopped sweet red pepper
  • 1/2 cup diced celery
  • 1/2 cup diced carrot
  • 1/2 cup diced mushrooms
  • 1/2 cup diced zucchini
  • 1/4 cup extra virgin olive oil
  • 1/4 teaspoon lemon salt
  • 1 teaspoon dried oregano
  • 1 1/2 teaspoons dried parsley
  • 1 teaspoon dried basil
  • 6 - cloves, whole
  • 1/2 teaspoon caraway seed, whole
  • 1 large bay leaf
  • 1 teaspoon chili pepper flakes
  • 1/2 teaspoon coarse sea salt
  • 2 tablespoons white sugar
  • 2 cans tomatoes, diced or stewed (56 oz)
  • 1 can Hunts thick and spicy tomato sauce (28 oz)
  • 3 ounces tomato paste
  • 1/2 cup chicken stock
  • 1/2 cup V8 vegetable juice, original
  • 1 cup cup dry red wine
  • 1/4 cup grated Romano cheese
  • 1/4 cup grated Asiago cheese
  • MEATBALLS
  • 1/2 pound ground veal
  • 1/2 pound ground beef
  • 1/2 pound ground pork
  • 1 large shallot, chopped
  • 2 cloves garlic, minced
  • 1 large egg, slightly beaten
  • 2 slices rustic bread, diced 1/2 inch
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper, fresh ground
  • 1 teaspoon oregano
  • 1 1/2 teaspoons parsley
  • MEATS
  • 2 - Italian sausages, extra hot, cut 1 inch chunks
  • 2 - Italian sausages, sweet fennel cut 1 inch chunks
  • 1 large pepperoni, cut 1 inch chunks (do not omit)

How To Make kato's garage style tomato sauce & meatball dinner

  • Step 1
    SPICY TOMATO & VEGETABLE SAUCE - In a large pot, cook the onion and garlic for a few minutes, in olive oil, over medium heat, then add the red and green peppers, then add the celery, and carrots.
  • Step 2
    Next add the lemon salt, celery salt, oregano, parsley, basil, cloves, caraway seeds, bay leaf, chili pepper flakes and coarse sea salt. (Cook 5 minutes, until it starts to caramelize), then add the mushrooms and zucchini.
  • Step 3
    Now add the white sugar, diced tomatoes, tomato sauce, tomato paste, chicken stock, V8 juice, red wine and cheeses and simmer over low heat for 30 minutes.
  • Step 4
    MEATBALLS - Combine the beef, pork, veal, shallot, garlic, egg, prepared bread, Parmesan cheese, salt, pepper, oregano and parsley in large bowl and gently mix by hand.
  • Step 5
    Roll into balls,(your favorite size) and drop raw into the simmering sauce.
  • Step 6
    To the sauce add the raw sausages and pepperoni and cook gently on low for 3 hours.
  • Step 7
    Serve over hot buttered noodles with a nice Italian bread and a simple green salad.
