hobo packets
I came up with this recipe after talking to my uncle about his days of traveling around Texas as a teenager during the Depression. He told me about smelling the most wonderful smells from a couple of miles away, and tasting the terrific stews, that he said you didn't want to ask what was in it. This tastes great served with cornbread, and you can also use boneless chicken breast or thighs Enjoy and let me know what you think.

Ingredients
- - 1 large pieces of foil cut into fourths
- 1 1/2 pounds beef stew meat cut into bite size pieces
- 2 - large baking potatoes diced
- 1 cup chopped onion
- 2 - large carrots chopped
- 1 cup froze peas
- 2 - chopped green onions tops too
- 1 cup shredded cheddar cheese
- 2 tablespoons oil
- - salt and pepper
How To Make hobo packets

Step 1heat the oil in a pan. Salt and pepper the meat and brown it in the oil. Set aside.

Step 2cut the foil in to four equal pieces.

Step 3mix the veggies together and add the meat

Step 4divide everything between the foil and fold into packets

Step 5place the packets on a cookie sheet, and bake at 375 for 30 minutes

Step 6carefully open the packets and top with cheese. Close the packets back and let stand 5 minutes until the cheese melts
