My favorite burger to date. This rub is enough for approx. eight burgers

Ingredients

  • - freshly ground chuck
  • 2 - pasilla dried chile peppers
  • 2 - guajillo dried chile peppers
  • 2 - new mexico dried chile peppers
  • 1 teaspoon apple cider vinegar
  • 1 teaspoon liquid smoke flavoring
  • 2 teaspoons worcestershire sauce
  • 2 cloves garlic
  • - **cilantro, fresh
  • - **olive oil

How To Make fiesta burger

  • Step 1
    Remove seeds and stem from dried chiles. For the New Mexico ones, you can usually buy mild, hot, or very hot, your preference. I use mild since I'm going for heat in this particular recipe.
  • Step 2
    Place chiles in food processor with garlic. Puree until both are ground up finely.
  • Step 3
    Remove from processor and place in a small bowl. Now add apple cider vinegar, liquid smoke, Worcestershire sauce and enough olive oil to make it the consistency you like. Then chop cilantro and mix in. The amount of cilantro will also be your preference.
  • Step 4
    Another tip to a great burger is grind your own beef if possible. I prefer chuck to make my burgers. Form patties and rub both sides with marinade. This will rub approx. 8 good size burgers.
