My dad would make this on special Sundays. It was always so tender...yum!

Ingredients

onion, cut into thick slices
2 large
carrots, peeled and cut into 1"-pieces
12 oz
mushrooms, quartered
4 tsp
minced garlic

14-1/2 oz can diced tomatoes, drained
1 c
ketchup
2 Tbsp
dijon mustard
2 Tbsp
worcestershire sauce
3 lb
chuck roast, trimmed of fat
1/4 tsp
each salt and pepper

How to Make Dads slow-cooked, tender pot roast

Step-by-Step

  • 1In slow-cooker, combine onion, carrots, mushrooms, garlic and tomatoes. In bowl, whisk together ketchup, mustard and worcestershire sauce.
  • 2Pour 1/2 the sauce over veggies. Sprinkle roast w/ salt and pepper. Place roast over veggies. Spread remaining sauce over roast. Cover, cook for 8 hrs.
