My dad would make this on special Sundays. It was always so tender...yum!

Ingredients

  • 1 - onion, cut into thick slices
  • 2 large carrots, peeled and cut into 1"-pieces
  • 12 ounces mushrooms, quartered
  • 4 teaspoons minced garlic
  • 1 - 14-1/2 oz can diced tomatoes, drained
  • 1 cup ketchup
  • 2 tablespoons dijon mustard
  • 2 tablespoons worcestershire sauce
  • 3 pounds chuck roast, trimmed of fat
  • 1/4 teaspoon each salt and pepper

How To Make dads slow-cooked, tender pot roast

  • Step 1
    In slow-cooker, combine onion, carrots, mushrooms, garlic and tomatoes. In bowl, whisk together ketchup, mustard and worcestershire sauce.
  • Step 2
    Pour 1/2 the sauce over veggies. Sprinkle roast w/ salt and pepper. Place roast over veggies. Spread remaining sauce over roast. Cover, cook for 8 hrs.
