crock pot stuffed peppers

These were Granny's recipe but Mom changed it a little because she made it in the pressure cooker. I love cooking them in my crock pot. I can leave them in the morning when I'd leave for work and by the time I came home the house smelled yummy and the peppers were falling apart. Enjoy which ever way you want to make them. I have put the pressure cooker times in here too.

Ingredients

  • 6 - green peppers
  • 1 1/2 pounds hamburger, ground
  • 2 stalks celery
  • 1 medium onion, chopped
  • 1 can medium of diced tomatoes, low sodium
  • 1 - egg, beaten
  • 1/2 cup cooked rice
  • 1/4 cup ketchup or barbeque sauce

How To Make crock pot stuffed peppers

  • Step 1
    Cook rice, set aside. Cut off the top of the green peppers to form a bowl. Clean out seeds. dice the tops into small pieces and discard stem.
  • Step 2
    In bowl mix hamburger, diced celery, green pepper and onion, 1 egg beaten, and rice. Add ketchup or barbeque sauce. Mix together well.
  • Step 3
    Stuff peppers with hamburger mixture and place in crock pot side by side with hamburger facing up.
  • Step 4
    Open can of tomatoes and pour over the stuffed peppers in the crock pot.
  • Step 5
    Set for either 4 or 8 hours depending on when you want to eat. If making in a pressure cooker, cook 10 minutes and if peppers not soft enough another 5 minutes. Enjoy!
