You can also put this in the Crock Pot for about 12 or so hours. Add onion when you have four hours to go. Add carrots when you have 2 hours to go. Add cabbage when you have an hour to go. You could add cubed potatoes, but my family likes to mix their cabbage with mashed potatoes, so I serve this with the mashed potatoes and biscuits.

    corned beef brisket (4 lb.)
  • 4
    small onions
  • 4
    3 carrots, peeled and chopped
  • 1
    medium cabbage
  • fresh ground pepper, to taste

Test Kitchen Tips
If you want to cook potatoes with the corned beef, slice small red potatoes in half (a two-pound bag). Add them to the pot with the cabbage, letting them cook underneath. When the cabbage is done, so are the potatoes.
  • Corned beef in a large pot.
    Place corned beef in a large pot.
  • Water added to the pot to cover the corned beef.
    Cover with cold water. Simmer for 2 1/2 hours, skimming fat off liquid when necessary.
  • Onions and carrots added to the pot.
    Add onions and carrots. Cover and simmer 1 hour.
  • Cabbage added to the pot.
    Add cabbage and simmer uncovered for 20 minutes.
  • Slicing the cooked corned beef.
    Remove meat to a platter and slice. Arrange cabbage, carrots, and onions around the sliced brisket.
  • Adding black pepper to the corned beef and cabbage.
    Season to taste with fresh ground pepper and serve.
