This corned beef and cabbage recipe is the definition of comfort food. The brisket is tender and stews with the cabbage, carrots, and onions giving the whole dish a tasty corned beef flavor. The vegetables are buttery and savory. A delicious dinner for St. Patrick's Day.
Note: If you want to cook potatoes with the corned beef, slice small red potatoes in half (a two-pound bag). Add them to the pot with the cabbage, letting them cook underneath. When the cabbage is done, so are the potatoes.
