With St. Patrick's Day not too far away now I start looking thru my Irish recipes . This little gem comes from the Appletree Press title: "A Little Irish Cookbook." I have made this recipe with a few changes of my own. My husband and I love Irish stew. It is a quick and easy recipe to prepare. I hope you will give this one a try.

2+1/2 lb. stewing beef chunks
2 large onions sliced
6 medium carrots sliced
2 tbsp of seasoned flour
a little fat or beef dripping
1/2 cup dry cider
1 cup guinness with water
(i add the whole can of guinness and one cup of water)
sprig of parsley
boiled potatoes quartered

How to Make Beef in Guinness Irish Stew


  • 1Cut beef into chunks , and peel and slice the onions and carrots
  • 2Toss the beef in flour and brown quickly in hot fat
  • 3Remove beef and fry the onions gently until transparent
  • 4Return the beef and add the carrots and the liquid. Bring just to a boil , reduce heat to a very gentle simmer, cover closely
  • 5Cook for 1+1/2 -2 hours. Check the dish so that it doesn't dry out, adding more liquid if necessary
  • 6Sprinkle with chopped parsley and serve with boiled potatoes
  • 7(I cook the potatoes right in with the beef, carrots and onions. I also add a clove or two of garlic.)
