Beef and Asparagus Stir-Fry

My favorite meal when fresh asparagus is newly available in produce.

Stove Top


1 1/2 lb
boneless beef sirloin steak
2 lb
asparagus spears
cooking spray
2 c
sliced fresh mushrooms
1/2 tsp
crushed red peppers
1 bunch
green onions, diagonally sliced
1/2 c
teriyaki sauce
3 c
cooked rice
sesame seeds


1Cut steak into 1/8 inch thick slices, set aside.
2Snap off ends of asparagus and cup diagonally into 1 inch pieces.
3Coat large non-stick skillet with cooking spray and place over medium-high heat until hot. Add beef; stir fry 5 minutes. Drain in colander, wipe drippings from skillet with paper towel.
4Re-coat skillet with cooking spray. Add asparagus, mushrooms, red pepper flakes, and green onions; stir fry 3 minutes. Return beef to pan. Add teriyaki; stir fry 1 minute.
