My favorite meal when fresh asparagus is newly available in produce.

Ingredients

  • 1 1/2 pounds boneless beef sirloin steak
  • 2 pounds asparagus spears
  • - cooking spray
  • 2 cups sliced fresh mushrooms
  • 1/2 teaspoon crushed red peppers
  • 1 bunch green onions, diagonally sliced
  • 1/2 cup teriyaki sauce
  • 3 cups cooked rice
  • - sesame seeds

How To Make beef and asparagus stir-fry

  • Step 1
    Cut steak into 1/8 inch thick slices, set aside.
  • Step 2
    Snap off ends of asparagus and cup diagonally into 1 inch pieces.
  • Step 3
    Coat large non-stick skillet with cooking spray and place over medium-high heat until hot. Add beef; stir fry 5 minutes. Drain in colander, wipe drippings from skillet with paper towel.
  • Step 4
    Re-coat skillet with cooking spray. Add asparagus, mushrooms, red pepper flakes, and green onions; stir fry 3 minutes. Return beef to pan. Add teriyaki; stir fry 1 minute.
