I've been making this for years...it doesn't look like pizza, but that's what they call it...smells good when baking...I honestly thought I could smell the pepperoni, and there's none in it!
We like it alot...it's best when it's eaten warm, although it's still okay when cooled...

  • 2 c
    shredded/grated zucchini
  • 1 c
    finely chopped onion
  • 1/2 c
    olive oil
  • 4
    slightly beaten eggs
  • 1/2 c
    romano cheese, grated (fresh or can)
  • dash
  • 1/2 tsp
  • 1/2 tsp
    oregano, dried
  • 2 Tbsp
    parsley flakes (dried)
  • 1 c
    bisquick baking mix (or jiffy mix)



  1. Preheat oven to 350°F. Grease either a 13" x 9" x 2" pan OR 15" x 10" x 1" jellyroll pan.
  2. Mix all ingredients together in bowl. Pour into pan.
  3. Bake @ 350° for 40 minutes for cake pan; 30 minutes for jelly roll pan. It should be a light golden brown on top.
  4. Remove from oven & let cool slightly and cut in serving squares.
