zucchini pizza

I've been making this for years...it doesn't look like pizza, but that's what they call it...smells good when baking...I honestly thought I could smell the pepperoni, and there's none in it! We like it alot...it's best when it's eaten warm, although it's still okay when cooled...

Ingredients

  • 2 cups shredded/grated zucchini
  • 1 cup finely chopped onion
  • 1/2 cup olive oil
  • 4 - slightly beaten eggs
  • 1/2 cup romano cheese, grated (fresh or can)
  • dash - pepper
  • 1/2 teaspoon salt
  • 1/2 teaspoon oregano, dried
  • 2 tablespoons parsley flakes (dried)
  • 1 cup bisquick baking mix (or jiffy mix)

How To Make zucchini pizza

  • Step 1
    Preheat oven to 350°F. Grease either a 13" x 9" x 2" pan OR 15" x 10" x 1" jellyroll pan.
  • Step 2
    Mix all ingredients together in bowl. Pour into pan.
  • Step 3
    Bake @ 350° for 40 minutes for cake pan; 30 minutes for jelly roll pan. It should be a light golden brown on top.
  • Step 4
    Remove from oven & let cool slightly and cut in serving squares.
