We like it alot...it's best when it's eaten warm, although it's still okay when cooled...
2 cshredded/grated zucchini
1 cfinely chopped onion
1/2 colive oil
4slightly beaten eggs
1/2 cromano cheese, grated (fresh or can)
1/2 tsporegano, dried
2 Tbspparsley flakes (dried)
1 cbisquick baking mix (or jiffy mix)
How to Make ZUCCHINI PIZZA
- Preheat oven to 350°F. Grease either a 13" x 9" x 2" pan OR 15" x 10" x 1" jellyroll pan.
- Mix all ingredients together in bowl. Pour into pan.
- Bake @ 350° for 40 minutes for cake pan; 30 minutes for jelly roll pan. It should be a light golden brown on top.
- Remove from oven & let cool slightly and cut in serving squares.
