snowtime beef casserole
This is a recipe I got from a lady at church. This attractive dish is like a cannelloni without the pasta and the extra effort. Exceptional!!!!!!!!!!!!!!!!!!!!

Ingredients
- 1 pound ground chuck
- 2--------8 ounces cans tomato sauce
- 1/4 cup chopped onion
- 1 teaspoon parsley flakes
- 1/2 teaspoon oregano, dried
- 1 teaspoon basil, dried
- 3/4 teaspoon salt
- 1/4 teaspoon pepper
- 2 packages frozen chopped spinach, cooked and drained
- 1 pint cottage cheese, small curd
- 8 ounces mozzarella cheese slices

Step 1Brown beef in skillet; pour off fat. Stir in tomato sauce, onion, parsley, oregano, basil, 1/2 teaspoon salt and pepper. Simmer uncovered 10 minutes, stirring occasionally. Combine spinach with cottage cheese and remaining 1/4 teaspoon salt. Spoon spinach mixture around edge of baking dish [13x9]. Pour beef mixture into center. Cut each mozzarella slice into 3 lenght-wise strips. Arrange in lattice design over meat. Bake at 375 degrees for 20 minutes.
