I created this recipe to help my boys eat more vegetables when they were young. They seemed to love anything with tomato sauce so this recipe was a big success with them!

Ingredients
- 1 tablespoon olive oil
- 1 teaspoon minced garlic
- 16 ounces can tomato sauce
- 16 ounces water
- 3 - medium zucchini
- 1 teaspoon salt
- 1 teaspoon basil
- 1/2 teaspoon oregano
How To Make saucy italian zucchini

Step 1Slice zucchini into 1 inch cubes. (You can peel the skin off before slicing if desired.)

Step 2Brown minced garlic in olive oil.

Step 3Add the rest of the ingredients and bring to a boil.

Step 4Simmer uncovered for 30 minutes or longer until zucchini is tender.
