saucy italian zucchini

I created this recipe to help my boys eat more vegetables when they were young. They seemed to love anything with tomato sauce so this recipe was a big success with them!

Ingredients

  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 16 ounces can tomato sauce
  • 16 ounces water
  • 3 - medium zucchini
  • 1 teaspoon salt
  • 1 teaspoon basil
  • 1/2 teaspoon oregano

How To Make saucy italian zucchini

  • Step 1
    Slice zucchini into 1 inch cubes. (You can peel the skin off before slicing if desired.)
  • Step 2
    Brown minced garlic in olive oil.
  • Step 3
    Add the rest of the ingredients and bring to a boil.
  • Step 4
    Simmer uncovered for 30 minutes or longer until zucchini is tender.
