This is a rice and veggie dish, but you can cook some meat and add it in if you wish. It is good as is or with meats.

Ingredients

  • MAIN INGREDIENTS:
  • 4 cups water, boiling
  • 2 cups rice
  • 1 teaspoon salt
  • 4 - green onions (minced)
  • 1 large onion (diced)
  • 1 large bell pepper (diced... i use red) (slivered or diced)
  • 2 pounds small zucchini (4 green and 4 yellow) sliced into 1/2 inch thick
  • 1 can (26 ounces) pasta sauce
  • 1 teaspoon each: dry basil, anise seeds, garlic powder
  • TOPPING:
  • 1/4 cup grated parmesan cheese
  • 1 package mozzarella cheese (8 - 16 ounces)

How To Make rice and zucchini bake!

  • Step 1
    Preheat oven to 350 degrees.
  • Step 2
    Bring 4 cups of water to a boil in a sauce pan. Add the salt. Add the rice. Cook covered on low heat for 20 minutes (or until rice is done).
  • Step 3
    In another sauce pan, cook the onions for 5 minutes, add the remaining vegetables and cook for 5 more minutes. When the zucchini is tender, remove from heat. Drain well.
  • Step 4
    Add pasta sauce and spices to pan. Gently fold in the cooked rice.
  • Step 5
    Put rice and vegetable mixture into 9x13 inch baking dish.
  • Step 6
    Sprinkle top of veggies and rice mixture with the parmesan cheese. Sprinkle the Mozzarella Cheese over the top. Bake uncovered for 25 minutes, until bubbly and cheese is melted and golden.
  • Step 7
    *** Serve with a salad and enjoy!
