Pre-made flatbread, oven roasted red peppers, feta and olive oil...YUM!

Ingredients

  • 5 - pre-made flatbreads...i used kangaroo brand
  • 1 1/2 cups feta cheese split into 4 equal parts
  • 1 cup roasted red peppers (i oven roasted mine but i've used canned before with no change in taste)
  • 4 tablespoons basil, dried or fresh split into 4- 1t portions
  • 4 tablespoons olive oil, extra virgin or garlic flavored olive oil split into 4-1t portions
  • 4 teaspoons garlic powder
  • - salt and pepper to taste
  • ROASTED RED PEPPERS
  • 2 - red peppers
  • 2 tablespoons olive oil
  • GARLIC OLIVE OIL
  • 1 - jar of your favorite olive oil
  • 4 cloves garlic peeled and pressed to release oil

How To Make quick flatbread with roasted red pepper and feta

    Step 1
    Prepare roasted red peppers by placing them on a baking sheet and drizzling with olive oil. Roast at 400 degrees for about 20 minutes. Chop

    Step 2
    Garlic olive oil can be prepared weeks in advance by taking your pressed garlic cloves and adding them to the olive oil to infuse the flavor. Skip this step if using regular olive oik.

    Step 3
    Top pre-made flatbread with feta, red peppers, basil and garlic powder. Salt and pepper to taste. Drizzle olive oil over everything

    Step 4
    Broil for 5 minutes or until the flatbread is crisp.
