this is better with fresh vegetables but frozen works well. Use any combination that you like.

Ingredients

  • - 1 12-16oz box of whole wheat pasta shapes
  • 1/2-1 cup each fresh vegetables 3-4 types more or less to your liking
  • - asparagus, fresh,red pepper peas, broccoli ,mushrooms
  • - etc. your choice
  • 16 ounces lowfat ricotta cheese
  • - parmesan cheese to taste

How To Make pasta ricotta

  • Step 1
    add box of pasta to large pot of salted water cook according to pkg. instructions. add fresh or frozen vegeies to pot during the last 5 min. or more mins of cooking time according to your doneness. drain pot save some water add pasta back to pot, stir some pasta water into ricotta cheese to thin like a sauce, or add tomato sauce to taste. add vegetables and parm cheese to taste. serve in bowls while hot.
