Pan Seared Shrimp

Angel Slave

Fast, easy, flavorful. The best part is it's all FRESH. I'm not big on using pre-made product in my cooking. I always go for the highest gain nutritionally with the least amount of processed carbs. Give FRESH a try......start thinking the way Jamie Oliver and the Food Revolution does:)

2 Tbsp
fresh, chopped basil (dried just won't do)
2 lb
medium-large shrimp - cleaned & deveubed
1 qt
container cherry tomatoes - cut each in half
2 clove
garlic, finely diced - or creamed using salt to taste
1/2 c
breadcrumbs - please use panko breadcrumbs - they have the necessary body for the success of the recipe
4 Tbsp
eevo - olive oil is always a better choice than butter - but for you purists - equal amount of butter
cracked black pepper (i crush whole under a rolling pin)

1In a large frying pan, heat olive oil. Pan sear shrimp for 3-4 minutes on each side. Add tomatoes, garlic, cracked black pepper to taste.
2Lower heat & cook for three more minutes. Turn off heat and toss with remaining ingredients
3Instead of serving this with pasta - I serve it over either quinoa (a very nice grain), or farro - an Italian grain
4Serve with a side salad & your favorite wine
