I've been making this for years. I make this 1 or 2 times during Lent. This is fast (20 min.) and easy and tastes great. I serve with a tossed salad and crusty Italian bread.

Ingredients For linguine with tuscan style shrimp

1 lbfrozen shrimp
-
1/2 lbdried linguine
-
2 Tbspolive oil, extra virgin

4 clovegarlic, finely chopped

3plum tomatoes, diced (1 cup)

1 tspdried basil
-
salt and pepper to taste

juice of 1/2 a lemon
How To Make linguine with tuscan style shrimp

1Defrost shrimp under cold running water 3-5 minutes. Pat dry.

2Cook pasta according to package directions. While pasta is cooking, heat oil on low in large skillet; add garlic and cook for 1 minute (do not brown).

3Add shrimp and cook 2 minutes on medium. Add diced tomatoes and basil and cook an additional 2 minutes. Season with salt and pepper to taste. Squeeze lemon juice over the top. Toss with cooked pasta.
