linguine with tuscan style shrimp
I've been making this for years. I make this 1 or 2 times during Lent. This is fast (20 min), easy, and tastes great. I serve with a tossed salad and crusty Italian bread.

Ingredients
- 1 pound frozen shrimp
- 1/2 pound linguine pasta
- 2 tablespoons extra virgin olive oil
- 4 cloves garlic, finely chopped
- 3 large plum tomatoes, diced (1 cup)
- 1 teaspoon dried basil
- salt and pepper, to taste
- 1/2 medium lemon, juiced
How To Make linguine with tuscan style shrimp

Step 1Defrost shrimp under cold running water 3-5 minutes. Pat dry.

Step 2Cook pasta according to package directions. While pasta is cooking, heat oil on low in a large skillet. Add garlic and cook for 1 minute (do not brown).

Step 3Add shrimp and cook 2 minutes on medium heat.

Step 4Add diced tomatoes and basil. Cook for an additional 2 minutes.

Step 5Season with salt and pepper to taste.

Step 6Squeeze lemon juice over the top.

Step 7Toss with cooked pasta.
