lightning fast healthy spaghetti

Sometimes you want food fast but, not "fast food." Well, this was the case one Friday evening after a long work week. I was starved for something good, filling, and quick. I went into my kitchen, started looking around, and got busy. Not only did I create one of the best-tasting spaghetti dinners I've eaten in a long time but, I made it all from start to finish in under an hour.

Blue Ribbon Recipe

This spaghetti dinner proves eating healthier doesn't mean you can't have comfort food. Instead of ground turkey, the meat sauce is lightened up with ground turkey. With the onions, bell peppers, garlic, and seasoning, it's filled with flavor and you might not even realize ground turkey was used. As the sauce simmers, it thickens up. If you think it's too thick, use water to thin the sauce (we used 12 ounces). Serving the sauce over whole wheat or protein spaghetti for a hearty (and healthy) weeknight meal.

Ingredients

  • 1 pound ground turkey
  • 4 cloves garlic, minced
  • 1/2 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 tablespoons Italian seasoning
  • 1/2 - 1 teaspoons black pepper
  • 1 teaspoon garlic salt
  • 1 teaspoon lemon pepper seasoning
  • 1 jar pasta sauce or tomato sauce (24 oz)
  • 1 box Ronzoni healthy harvest whole wheat blend thin spaghetti (13.25 oz)

How To Make lightning fast healthy spaghetti

  • Brown ground turkey, onions, bell pepper, and garlic.
    Step 1
In a large skillet crumble ground turkey and start cooking over medium-high heat. Add in minced garlic, diced onions, and diced green bell peppers. Using a stir-fry technique mix all ingredients until meat is thoroughly cooked. Drain meat if you want, but there should be little or no fat oils left.
  • Add the seasonings.
    Step 2
Add all seasonings to the meat mixture. Stir well to evenly distribute as you continue to stir over heat.
  • Add tomato sauce and simmer.
    Step 3
Pour tomato sauce or pasta sauce into the meat mixture. Stir well. Cover and reduce heat. Simmer for 20 minutes. Stir often to prevent sticking.
  • Prepare whole wheat pasta while the sauce is simmering.
    Step 4
While the sauce is simmering, prepare pasta according to the package directions. You can substitute any type of spaghetti or pasta depending on your preference. Spoon sauce over pasta and serve with a green salad.
