Lentils with Pasta
1 lbbag of lentils
1 mediumwhite onion (chopped)
1 1/2 cchopped carrots
1 1/2 cchopped celery
1 can(s)tomato paste
2chicken bouillon cubes (optional)
·a little olive oil to saute onions
1 lbmacaroni (cooked) (elbow or ditilini)
1 Tbsphot pepper (optional)
1 pinchsalt (but remember you have the bouillon cubes in there)
1 pinchblack pepper
can(s)(small) tomatoe sauce (only if you like a more tomatoey taste
How to Make Lentils with Pasta
- Rinse and drain your Lentils
In a large pot add a little Olive oil (just enough to blond your onions) - then add tomato paste and Lentils and saute for a couple of minutes.
Add 10-12 cups of water
Bring to a boil
Add salt and pepper (to taste)- you can even add a shot of hot pepper if you like it hot! and your chicken bouillon cubes (optional)
Add your carrots and celery. Cover and let cook for about 1-2 hours. Don't forget to stir!
You may add Escerole if you like a vegetable but be sure to add it early on so it cooks well
- Add water...bring to boil....then add celery and carrots....Let simmer and stir occassionally....the longer you cook...the better it is....
- You can make a pound of Ditilini or Elbow macaroni and pour the Lentils over it for a delicious meal!
