This is a great dish for winter but you can have it anytime and it's healthy!

1 lb
bag of lentils
1 medium
white onion (chopped)
1 1/2 c
chopped carrots
1 1/2 c
chopped celery
1 can(s)
tomato paste
10 c
chicken bouillon cubes (optional)
a little olive oil to saute onions
1 lb
macaroni (cooked) (elbow or ditilini)
1 Tbsp
hot pepper (optional)
1 pinch
salt (but remember you have the bouillon cubes in there)
1 pinch
black pepper

How to Make Lentils with Pasta


  • 1Rinse and drain your Lentils

    In a large pot add a little Olive oil (just enough to blond your onions) - then add tomato paste and Lentils and saute for a couple of minutes.

    Add 10-12 cups of water

    Bring to a boil

    Add salt and pepper (to taste)- you can even add a shot of hot pepper if you like it hot! and your chicken bouillon cubes (optional)

    Add your carrots and celery. Cover and let cook for about 1-2 hours. Don't forget to stir!

    You may add Escerole if you like a vegetable but be sure to add it early on so it cooks well

  • 2Add water...bring to boil....then add celery and carrots....Let simmer and stir occassionally....the longer you cook...the better it is....
  • 3You can make a pound of Ditilini or Elbow macaroni and pour the Lentils over it for a delicious meal!
