This is a great dish for winter but you can have it anytime and it's healthy!

Ingredients

  • 1 pound bag of lentils
  • 1 medium white onion (chopped)
  • 1 1/2 cups chopped carrots
  • 1 1/2 cups chopped celery
  • 1 can tomato paste
  • 10 cups water
  • 2 - chicken bouillon cubes (optional)
  • - a little olive oil to saute onions
  • 1 pound macaroni (cooked) (elbow or ditilini)
  • 1 tablespoon hot pepper (optional)
  • 1 pinch salt (but remember you have the bouillon cubes in there)
  • 1 pinch black pepper
  • can (small) tomatoe sauce (only if you like a more tomatoey taste

How To Make lentils with pasta

  • Step 1
    Rinse and drain your Lentils In a large pot add a little Olive oil (just enough to blond your onions) - then add tomato paste and Lentils and saute for a couple of minutes. Add 10-12 cups of water Bring to a boil Add salt and pepper (to taste)- you can even add a shot of hot pepper if you like it hot! and your chicken bouillon cubes (optional) Add your carrots and celery. Cover and let cook for about 1-2 hours. Don't forget to stir! You may add Escerole if you like a vegetable but be sure to add it early on so it cooks well Enjoy!
  • Step 2
    Add water...bring to boil....then add celery and carrots....Let simmer and stir occassionally....the longer you cook...the better it is....
  • Step 3
    You can make a pound of Ditilini or Elbow macaroni and pour the Lentils over it for a delicious meal!
