This is a quick, easy and gosh darn great tomato & bread salad you can make in a jiffy. It's the perfect date for brunch, lunch & dinner. I hope that you enjoy. Cooking with Passion, sw :)

Ingredients

  • 3 c
    day old crusty italian bread, cubed & lighlty toasted
  • 1 large
    tomato, cubed
  • 1/4 c
    red onion, chopped
  • 5 large
    basil leaves, torn
  • 1/4 c
    arugula, torn
  • 6 slice
    pancetta, torn
  • 4 slice
    asiago chesse, torn
  • DRESSING

  • 1/4 c
    olive oil, extra virgin
  • 1 tsp
    lemon zest, grated
  • 1/2 Tbsp
    balsamic vinegar
  • 1/2 Tbsp
    white wine vinegar
  • 1/2 tsp
    thyme, dried
  • ·
    salt & pepper to taste
  • ·
    **you can add capers, cucumbers, olives, salame, different cheeses & bread etc.**

How to Make Poppin' Panzanella Salad

Step-by-Step

  1. Combine all the dressing ingredients together in a large mixing bowl. Add bread cubes to the mixing bowl and coat. Let the bread marinate in the dressing for 10 minutes. Toss in remaining salad ingredients to the mixing bowl. Mix well. Serve!
