This is a quick, easy and gosh darn great tomato & bread salad you can make in a jiffy. It's the perfect date for brunch, lunch & dinner. I hope that you enjoy. Cooking with Passion, sw :)

Ingredients

  • 3 cups day old crusty italian bread, cubed & lighlty toasted
  • 1 large tomato, cubed
  • 1/4 cup red onion, chopped
  • 5 large basil leaves, torn
  • 1/4 cup arugula, torn
  • 6 slices pancetta, torn
  • 4 slices asiago chesse, torn
  • DRESSING
  • 1/4 cup olive oil, extra virgin
  • 1 teaspoon lemon zest, grated
  • 1/2 tablespoon balsamic vinegar
  • 1/2 tablespoon white wine vinegar
  • 1/2 teaspoon thyme, dried
  • - salt & pepper to taste
  • - **you can add capers, cucumbers, olives, salame, different cheeses & bread etc.**

How To Make poppin' panzanella salad

  • Step 1
    Combine all the dressing ingredients together in a large mixing bowl. Add bread cubes to the mixing bowl and coat. Let the bread marinate in the dressing for 10 minutes. Toss in remaining salad ingredients to the mixing bowl. Mix well. Serve!
