This is great for any meal of the day or for brunch .... delish!

Ingredients

  • 1 tablespoon butter
  • 1 cup onion, minced
  • 1 - 10 ounces frozen spinach, thawed and drained
  • 1 - 15 ounces container ricotta cheese
  • 2 large eggs
  • 3/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg
  • 3/8 cup parmesan cheese
  • 1 - baked 9 inch pie shell

How To Make italian spinach ricotta pie

  • Step 1
    Preheat oven 350 degrees.
  • Step 2
    Drain spinach and sqeeze well. Melt butter and saute onion until soft. Add spinach and stir until most of the moisture is gone. Remove from heat.
  • Step 3
    In a large bowl, add all the other ingredients to the spinach mixture and stir until the mixture looks like green and white marble. Pour into baked pie shell.
  • Step 4
    Bake at 350 degrees for about 40 minutes, or until the top is golden and the filling is set.
