Ingredients

  • 1 pound bacon chopped to small piecies and browned
  • 1 tablespoon olive oil if needed
  • 1 large onion chopped or 2 bunches of salad onions chopped with tops incvluded
  • 1 package baby carrots chopped to bite sizes
  • 2 large celery stalks chopped
  • 6 cloves garlic crushed
  • 1 tablespoon oregano
  • 1 1/2 tablespoons basil (fresh herbs is best)
  • 2 quarts broth (beef or chicken)
  • 2 cups dried lentils
  • 1 large can of petite diced tomatoes

How To Make italian lentil soup

  • Step 1
    In a 5 qt stock pot, brown bacon piecies for about 5 minutes then add olive oil to the pan (if needed) and add chopped onions, smashed garlic, carrots, and celery and sauté for about 8 minutes.
  • Step 2
    Now, add tomatoes, broth, oregano, basil and simmer for about 10 minutes.
  • Step 3
    Next add 2 cups dried lentils and cook for 30 - 40 minutes more.
  • Step 4
    Garnish with croutons and or fresh finely grated Parmesan cheese.
