Ingredients
- 1 pound bacon chopped to small piecies and browned
- 1 tablespoon olive oil if needed
- 1 large onion chopped or 2 bunches of salad onions chopped with tops incvluded
- 1 package baby carrots chopped to bite sizes
- 2 large celery stalks chopped
- 6 cloves garlic crushed
- 1 tablespoon oregano
- 1 1/2 tablespoons basil (fresh herbs is best)
- 2 quarts broth (beef or chicken)
- 2 cups dried lentils
- 1 large can of petite diced tomatoes
How To Make italian lentil soup

Step 1In a 5 qt stock pot, brown bacon piecies for about 5 minutes then add olive oil to the pan (if needed) and add chopped onions, smashed garlic, carrots, and celery and sauté for about 8 minutes.

Step 2Now, add tomatoes, broth, oregano, basil and simmer for about 10 minutes.

Step 3Next add 2 cups dried lentils and cook for 30 - 40 minutes more.

Step 4Garnish with croutons and or fresh finely grated Parmesan cheese.
