My little Italian co-worker Lived at home with her 60 yr old mom from Italy and this is her recipe; via the phone. I needed to make dinner that nite,she came to the rescue!!

Ingredients
- 3/8 - 1/2 slice eggplant, skin off; soak in salt water 1/2 hr or so
- - egg beaten with dash salt
- - parmigiano-reggiano, grated
- - mozzarella cheese
- - marinara sauce
How To Make eggplant parmesan

Step 1Oven 350 - 400.

Step 2Drain eggplant and dry on paper towels; dip each slice in egg; saute or fry in oil on med heat, until lightly browned.

Step 39x13" baking dish layer (flat) Sauce, cheeses, eggplant, ending with sauce and cheeses. Grate Mozzarella cheese over all. Bake until cheese melts.
