eggplant parmesan

My little Italian co-worker Lived at home with her 60 yr old mom from Italy and this is her recipe; via the phone. I needed to make dinner that nite,she came to the rescue!!

Ingredients

  • 3/8 - 1/2 slice eggplant, skin off; soak in salt water 1/2 hr or so
  • - egg beaten with dash salt
  • - parmigiano-reggiano, grated
  • - mozzarella cheese
  • - marinara sauce

How To Make eggplant parmesan

  • Step 1
    Oven 350 - 400.
  • Step 2
    Drain eggplant and dry on paper towels; dip each slice in egg; saute or fry in oil on med heat, until lightly browned.
  • Step 3
    9x13" baking dish layer (flat) Sauce, cheeses, eggplant, ending with sauce and cheeses. Grate Mozzarella cheese over all. Bake until cheese melts.
  • Step 4
    This was written on a piece of memo paper as my friend got it from her mom in broken English. We love this dish! Hope you do too :)
