Ingredients

3/8 - 1/2 sliceeggplant, skin off; soak in salt water 1/2 hr or so
-
·egg beaten with dash salt
-
·parmigiano-reggiano, grated
-
·mozzarella cheese
-
·marinara sauce
How to Make EGGPLANT PARMESAN
- Oven 350 - 400.
- Drain eggplant and dry on paper towels; dip each slice in egg; saute or fry in oil on med heat, until lightly browned.
- 9x13" baking dish layer (flat) Sauce, cheeses, eggplant, ending with sauce and cheeses. Grate Mozzarella cheese over all.
Bake until cheese melts. - This was written on a piece of memo paper as my friend got it from her mom in broken English. We love this dish! Hope you do too :)
