Trying to come up with healthier version of fried foods I had limited items and came up with are Healthy Eggplant parm.....Kid approved(well mine anyway)

Ingredients
- 1 - eggplant
- 12 ounces cottage cheese, small curd,low fat
- 1 1/2 cups mozzarella cheese, low-fat
- 1 jar spaghetti sauce
- 1 1/2 cups panko breadcrumbs
- 1-2 pinch herbs garlic,black pepper,red pepper,parsley
How To Make eggplant parm not fried

Step 1Wash eggplant and cut off skin.(you may leave the skin on)preference. Slice eggplant vertical or horizontal about 1/4 inch. Place eggplant in a zip lock bag and pour 3-4 tbsp of olive oil and shake. Pre heat oven to 350 degrees. Next fill a bowl or plate with panko breadcrumbs with herbs(garlic,parsley,red pepper it you like spice,black pepper). Dip Eggplant into to breadcrumbs place on baking sheet. Bake 6-9 minutes each side. Eggplant should be slightly limp. If too hard bake long until soft. Then take a deep pan and layer like lasagna. Place a little sauce at the bottom, then eggplant, then cottage cheese, the sprinkle mozzarella cheese reserving 1 cup for top. Repeat until all eggplant has been placed. Add remainder of mozzarella cheese. Place in over until cheese melts 10-15 minutes. Rest for 5 minutes and serve.
